History
of our Cheese House
In the fall
of 1982, the Old Order Amish Community of Cashton, Wisconsin broke
ground on three acres of land, off Cty. Hwy. D, for the purpose
of building a cheese
plant. The community had reached a consensus that having their own
cheese
factory was the best way to provide their dairy farmers with a continuing
market
for milk shipped in the traditional milk cans. This would ensure
and economic
future for themselves and their children in dairy farming.
Cheesemakers
Our cheesemaker,
Kevin Everhart, was born and raised around Richland Center,
Wisconsin. He lived above a cheese factory in Rockbridge, Wisconsin
where he
learned the art of cheesemaking from his father at a young age.
In the summer
of 1981, Kevin completed his 18 month apprenticeship and passed
his cheese making exam. He moved to Cashton in 1984 and became Plant
Manager
in 1986. In 2001, Kevin and his wife Kim, purchased the business
and formed
K & K Cheese, LLC.
Today, we process
approximately 120,000 pounds of milk a day from over 250
family farmers living not only around the Cashton, Wisconsin area,
but also from
Hillsboro, Wilton, Tomah, Sylvan, Reedstown and Chaseburg.
We make a variety
of cheese, which include a full line of our Pasture Pride Natures
which are farmer certified rBST free.
